new: salad sets!


















































hello, hello.
happy new week.


my vacation is excellent so far.

weather is lovely.
food is delicious.
company near perfect.

today, i went shopping,
picked fresh figs from the backyard,
ate an entire breakfast and lunch from the garden
and from the farm.
posted our first salad set at herriott grace.
beautiful.
all and all, a pretty darn great day.

on sisters & canadian summers.









well hello there,
how are you?
just thought i'd check in,
see how you are,

hee, funny.

she told me they were fresh from the family van,
that one in the background.

she couldn't imagine how her parents
dealt with her and her sister chi's
insistent banter from one coast to the other.


over such a long canadian journey.
i laughed. i could so relate.




anyway, i'm crossing canada myself tomorrow,
not by van, but by airplane of course.
by van would be fun.
i'd like that too.
i do love an airplane though.
anyway, let's speak in the week.

sunday sort of light - tuesday.









oh i think the last days of summer are upon us
it seems early, but i like it.


the wind is brisk,
but the sun shines just enough
there's a distinct hint of autumn in the air
that familiar feeling that fall brings.

last night i felt like squash soup
warm white bread from the oven
and mexican hot chocolate near to the ocean.



the thing is though
that i'm only 4 days away from summer vacation.
so for me it really must be summer still.


so, a note to autumn


dear mr fall:
i really love you.
but, can you please give me a few weeks?
i'm not quite ready for woolen tights
and pretty cable sweaters just yet.
i will be though,
i love your time of year best.
but just a few weeks?
i'd really appreciate a few weeks.

recipe one: peach cream cakes.




































oh hi there.
how are you?
happy start to the week.

so... remember that recipe i promised.
well, here it is, recipe number one,
a take on my blueberry cream cakes:




peach cream cakes


what you'll need:

knife, spatula, wire strainer, cutting board
one muffin pan, one medium sized heavy bottomed saucepan, a few bowls
2 piping bags with medium round tips
(not essential, but will make things easier)
soy wax paper, muffin cups or parchment paper
(one of the three will due)
mixer with paddle & whisk attachments
(also not essential, but again will make things easier)


a few thoughts before you begin:


there are three parts to this recipe,
a mixer is not essential for any of them.
but, my directions here assume the use of one.
that said, don't be shy if you don't have one
the good old fashion by hand way works just fine as well.
oh and both the
streusel & custard can be made a few days ahead.
just make sure to cover them & store in the fridge.
oh and one last thing,
piping bags are also not completely necessary,
you can use a couple spoons
but, it's much easier to use a piping bag
and it's a lot less messy.


the method:


1. using a ruler as a guide, make 20 - 24, 4.5 inches squares of paper, set aside
2. measure ingredients for all three components & set aside
3. start with the custard,
follow the recipe, then allow to cool slightly and place in fridge
4. next make the streusel and set aside
5. now you are ready to make the cake batter,
once ready place 1/2 of recipe into a medium sized piping bag
6. bring custard from the fridge and stir before placing in a piping bag
7. you will use between 1/2 and 3/4 of the custard for the cakes
(yah! you can just eat the rest, yum)
8. fill another piping bag with 1/2 of the custard, give or take
9. push two pieces of wax paper in each muffin cup
most likely you will have to do this as you go as
it's a little bit difficult to get them to stay otherwise
i arrange them so that as many corners as possible stick out,
it looks cute this way,
oh and don't worry if this stage seems awkward,
it's awkward for me too!
10. pipe half of the batter into the bottom of 10 or 11 cups
11. next pipe (or spoon) a bit of custard into the centre of each cake
(about the size of a small cherry tomato)
to ensure that all the cakes have an even amount of custard
pipe it with constant pressure
and try counting to four while you are adding it
this should give you a near perfect portion.
keep in mind that you should be using between 1/2 and 3/4 of the custard
12. next pipe the remaining cake batter on top of the custard,
ensuring that you cover it while making sure not to push the custard to the bottom of the batter.
what you don't want is for the custard to go through to the bottom of the pan
because this will cause the cakes to stick to the papers
13. slice two or three ripe peaches,
cutting first into quarters and then slicing each quarter into 4 small slices
14. place 2 or 3 slices on top of each cake, pressing down just a little
(you can substitute a little handful of blueberries instead if you like)
15. now you are ready to add the
streusel ,
liberally sprinkle the top of each, trying to keep the coverage as even as possible
16. place your muffin tin of cakes on a baking sheet
and bake in a 350 degree oven for 25 - 35 minutes,
making sure to turn the cakes at the 15 minute mark



the recipes:

1. vanilla bean custard (yum!)
2. brown sugar & oatmeal streusel
3. simple white cake (adapted from five roses)



vanilla bean custard

1/2 of a vanilla bean (optional)
72 gr sugar (1/3 cup + 1T)
22 gr cornstarch (7.5t)
300 ml 2% milk
3.5 egg yolks



1. pour 200 ml of milk into saucepan, reserve 100 ml in bowl, set aside
2. scrape contents of vanilla pod into milk and drop in the pod too
3. whisk yolks into bowl of milk you set aside before
4. measure dry ingredients, mixing half of the sugar and the cornstarch together
5. pour the remaining sugar directly into pot of milk without stirring,
6. place saucepan of milk on stove on high
7. add the dry mixture of sugar & cornstarch to the bowl of milk, stir
8. milk should be close to boiling by now, once it does remove from heat
9. while whisking scoop a small amount of the hot milk mixture into the egg mixture.
this will temper the eggs
and allows you to add them back to the hot mixture without the risk of scrambling
9. now that everything is combined,
return saucepan to the heat and whisk continually
10. the mixture will become smooth and shiny and will thicken considerably.
it's important not to allow it to burn,
so if you feel more comfortable cooking the custard on medium,
go ahead it will just take a touch longer.
11. whisk vigorously for 5 or so minutes, allowing the starch to cook off
12. immediately pour custard through a wire sieve set atop your mixing bowl
13. place bowl on machine and allow to mix on low fitted with the whisk attachment for 10 or so minutes.
this will allow the mixture to cool into a smooth, lump free custard.



brown suga
r streusel

70gr unsalted butter (1/3 cup)
60 gr brown sugar (1/4 cup)
77 gr large rolled oats (3/4 cup)
83 gr AP flour (1/2 cup)
1 t cinnamon (optional)

1. cream butter using paddle attachment until fluffy
2. add sugar, mix until light in color
3. add dry ingredients all at once
4. on medium, combine until mixture comes together into a course topping
5. set aside



simple white cake

170 gr AP flour (1 cup)
2 gr baking powder (1/2 t)
pinch of salt
53 gr unsalted butter (1/4 cup)
1 whole egg
110 ml milk
133 gr white sugar (1/2 cup + 1/8 cup)
2 or 3 medium sized peaches

1. cream butter until fluffy
2. in a separate bowl c
ombine flour, salt & baking powder, set aside
3. add white sugar & cream until light in color
4. with mixer on low, add the whole egg
5. allow to mix until fluffy
6. scrape down sides of bowl
7. to the butter mixture, add the flour and milk in thirds alternating between the two
8. start with flour and end with milk
9. do not over mix the batter, when it is smooth and looks combined it is ready


yields 10 - 12 small cream cakes





and voila, peach cream cakes!

on markets and eggs.

























hello.

most often on saturday mornings i go to the farmers market,
the one in the north building at the st. lawerence.
i like to go with friends, and on my own.
i take the train there. and i walk home.
i pay mind to the towering buildings of the financial district.
i stop in cafes. some i've been before, some not.
i pay attention to the goings on of a waking city.



at the market
i buy fruit and butter and eggs.
i reflect on my week.


i look for whichever fruit is in season
i put aside what i might feel like,
and in july i buy berries
strawberries, then raspberries and finally blueberries.
in august i gather stone-fruit
peaches, then nectarines.
after that, melons with seeds
and without.
nearing the end of the season and into the beginning of fall,
i buy apples. i love apples.

love that some are crisp and some soft.
that some are perfect for baking
and others are better uncooked.
and love that sometimes if you're lucky
you might bring one home,
and find a leaf is still attached.


more than that though, more than the fruit.
i go to the market for the eggs.
for eggs and for freshly turned butter.

in my mind,
there really is nothing quite like freshly turned butter, or eggs direct from the farm.
i grew up on a farm. i'm sure i can distinguish the taste.


this saturday,
i arrived to the egg table
late in the day. by egg standards anyway.
it's the table, that by 5:00am
is stacked high with cardboard crates full of fresh eggs.
brown and white, speckled and not.
grades A, B and C.


when i got there this past weekend their stocks were already down.
there were only 4 or so dozen left.
i was really late and they sell out each week.
i kind of panicked. wanting to push the people in front of me aside.
wanting not to wait my turn.
i waited though, and i tried to be patient.


i know, who gets excited about eggs?
i guess you should know,
i get excited over eggs, i do.
in the seconds i stood there,
all i could think was, but my eggs, don't buy my eggs.
and for that moment,
i was mad at myself for sleeping in.
but, i got a turn though, i bought my eggs.




half a dozen grade A, and a dozen grade B.
almost everything she had left.
i chatted with lorine, the egg lady.
she helped me with my bag.


she's a small women in her mid eighties.
she's had the table with her husband for over 60 years.
they've never missed a saturday.
60 years, can you imagine that? amazing.


that lady and her eggs
they're the main reason i love that market as i do.
she doesn't know it, but it's true.
the days she's not there, i think i almost feel sad.
she, in whatever way reminds me so, so much of my great grandmother
and of my childhood years, collecting eggs on the farm.


she reminds me of things so simple in life.
and of things that are just part of life on a farm.
things that i am so grateful for.
things that really did help to form who i am.
the days spent feeding chickens
mucking stalls and collecting eggs.
i didn't know it then, but those were the days.





enough about that though.
i've been baking this week.
writing recipes and then following them.
testing my own words.



i'm happy to report
i think my recipes are fine,
even, i'm hoping easy to follow.
so, those recipes i've been promising
they should start to appear late this week
or early in the weekend.


in that vein, i should tell you,
from now my blog may take a slightly different turn.
i'll still be writing you stories of course,
telling you of my adventures,
taking photos, but posting a little less.

the bonus, the recipes.
it's a welcome fork in the road for me.
a bit of a different path.
i hope you'll enjoy them.
and too, i hope you'll share your hits and even misses.


it's a road i probably should have been heading down long ago.
and one i'm kind of excited about.
so, new food photos and recipe number one to come later this week.
until then, hope your weekend was fun.
and the week is shaping up nicely.

sunday sort of light - on recipes and things.









hi, hi. happy tuesday.
how are you,
how was the weekend?
oh, mine was nice thank you,
actually it was great.

i ate nice food with friends,
watched julia & julia, (loved it)
drank great beer,
sat on sunny patios,
was given a bushel of niagara peaches, yum!
got caught in a sandy, rainy sort of windy storm. (fun)
did a small shop update,
took packages to the post office.
and bid my dear friend s farewell.



as for right this second.
well besides writing to you.
i'm making a lemon scented shortbread
and pâte à choux
for peach religieuse. yum.

blueberry cream cakes anyone?












































it's blueberry season in ontario
and i've made some small cream cakes.
remember i mentioned them a few days back.
anyway, i've got a few left.
i've already eaten too many!

any takers? i wouldn't mind to share.



the blueberries are wild, they're really delicious.
and the little white cakes,
they've got brown sugar and oatmeal streusel

and vanilla bean custard.
a nice mixture of crunchy and soft.
yum.


anyway, the weekend is upon us starting tomorrow.
hooray!

hi. how are you? how was the day?

mine was nice,
ate oatmeal for breakfast,
went to work.
the regular.
walked home from work with my friend r,
sipped icey summer smoothies.
ones that were perfectly salmon pink.
the sun was shining. the air was warm.


the summer was in full swing.


that's about it.
just the sunday sort of light post i promised yesterday.

they're from my walk home today.

and i realize i promised
blueberry cream cakes.
not words, sorry about that.
the cakes will come, really.
i actually made the crème patisserie for them today.
but i didn't bake the cakes.
there wasn't time.

i went to work
and to the market
i wrapped packages
and went shopping
i walked home.
i ate dinner.


i love walking home.
love the bustle of the city
love skipping the train.
love that it didn't matter that it rained
because eventually the sun came.


love that the streets were wet
and the air was humid.
but that i liked it just the same.

love that i wore my sunglasses
that i smiled, that i chattered on the phone.


love that on the way
i spoke to a man.

who kind of actually surprised me.
he wasn't there and then he was.
he seemed to kind of appear as from no where.
he told me he could tell my fortune.
he said he was lucky,
and that i, wasn't really.
not a great opener, but anyway.


he seemed kind
and slightly mythical
a largely inoffensive man.
so i continued to walk.
he walked beside me.


he mostly talked,
i mostly listened

i asked a few things
why he was talking to me
want he wanted, what was he up to,
what his motives were.




you know,
he knew more than i thought he should.



i realize you're guessing right now
that he said all that generic stuff
the stuff one might expect.
well, you're right about that, he did.
but he also said somethings that,
in short
, other than following me for the 6 blocks prior
he just couldn't have known.
so, he surprised me.



i told him i had to keep walking.
that i didn't pay for fortunes.
he smiled, kind of...
disappointed, even slightly irritated i think.
he'd thought he'd found a believer in me.
which he may have.
but today wasn't the day for fortune tellers.


we parted ways.
and i laughed out loud,
i guess you never know.
i guess you buy in that day, or you don't.
all the same, the simplicity of our interaction made me smile.
